  • 1 tablespoon coconut oil or vegetable shortening
  • Mini semi-sweet chocolate chips (for pupils)
  • Red decorating gel (for bloodshot veins)

Instructions

  1. Make the Truffle Base: In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, sifted powdered sugar, and salt. Mix with an electric hand mixer or stand mixer on low speed until a thick, cohesive, slightly sticky dough forms.
  2. Roll the Truffles: Using a small cookie scoop or tablespoon, scoop portions of the coconut mixture and roll firmly between your palms into smooth, round balls. Place on a parchment-lined baking sheet. You should get about 30-36 truffles.
  3. Chill the Truffles: Refrigerate the rolled truffles for at least 30 minutes, or up to 1 hour, until firm.
  4. Melt the White Chocolate: In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring after each, until smooth and melted. Do not overheat.
  5. Dip the Truffles: Remove chilled truffles from the fridge. Working one at a time, drop a truffle into the melted white chocolate. Use a fork to coat completely, then lift out, tap off excess chocolate, and slide back onto the parchment-lined sheet.
  6. Add the Pupils: While the white chocolate coating is still wet, gently press a mini semi-sweet chocolate chip into the center of each truffle, pointy side down.
  7. Create the Bloodshot Veins: Using a piping bag or small zip-top bag with a tiny corner snipped off, pipe thin, wiggly lines of red decorating gel outward from the pupil to create a bloodshot effect.
  8. Final Chill: Refrigerate the decorated truffles for at least 15 minutes to set the coating. Serve cold.

Chilling the truffles before dipping is crucial to prevent them from falling apart in the warm chocolate. Do not overheat white chocolate as it can seize.
