Golden Garlic Honey Immune Tonic

A simple, ancient immune-boosting tonic made with raw honey, fresh garlic, ginger, turmeric, and lemon. This naturally preserved elixir transforms over a week into a sweet, amber-colored syrup that supports your immune system during cold season.

  • 1 medium fresh garlic bulb (1012 cloves)
  • 1 cup raw honey
  • 2-inch piece fresh ginger, peeled and thinly sliced
  • 1-inch piece fresh turmeric, peeled and thinly sliced (or 1 teaspoon dried turmeric powder)
  • 56 whole black peppercorns
  • 1 organic lemon, thinly sliced
  • 1 cinnamon stick (optional)
  • 23 whole cloves (optional)
  • 1 small dried chili pepper (optional)

Instructions

  1. Separate the cloves from one medium garlic bulb. Peel each clove by pressing down gently with the flat side of your knife. Trim off any brown spots or green sprouts. Leave the cloves whole.
  2. Peel and thinly slice a 2-inch piece of ginger. Peel and thinly slice a 1-inch piece of fresh turmeric. Wash the lemon thoroughly and slice into thin rounds, removing any seeds.
  3. Layer the garlic cloves, ginger slices, turmeric slices, and lemon rounds in a clean 16-ounce glass jar. Add the black peppercorns and any optional ingredients (cinnamon stick, whole cloves, or chili pepper).
  4. Slowly pour the raw honey over the ingredients, filling the jar to the top. Do not stir yet.
  5. Use a wooden skewer or chopstick to gently poke around the jar, releasing trapped air bubbles. Ensure all garlic cloves are fully submerged in honey.
  6. Screw the lid on tightly. Label the jar with the date.
  7. Place the jar in a cool, dark place (like a kitchen cabinet or pantry) for at least 7 days, ideally 14 days. During the first week, turn the jar upside down once a day to redistribute the honey.
  8. After day 3, check for signs of spoilage. The mixture should smell pungent but pleasant. If you see mold or smell anything off, discard the batch.
  9. After 7-14 days, the tonic is ready. The honey will be thinner and the garlic cloves softened and darkened. Use immediately or continue infusing for up to a month for stronger flavor.

Notes

Use raw, unfiltered honey for best results. Ensure all garlic cloves are fully submerged to prevent spoilage. The tonic lasts for months stored in a cool, dark place. Do not refrigerate. Honey should not be given to infants under one year old. If garlic turns green or blue, it is safe to eat. Start a new batch before finishing the current one to always have mature tonic on hand.
