  • 3 tablespoons pure maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt, plus more for finishing
  • ¼ teaspoon freshly ground black pepper
  • Fresh thyme leaves or red pepper flakes for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Wash the delicata squash thoroughly and pat dry.
  4. Slice off about ½ inch from both ends of the squash and discard.
  5. Cut the squash crosswise into ½-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  6. In a small bowl, whisk together melted butter, maple syrup, cinnamon, salt, and black pepper until smooth.
  7. Arrange squash rings in a single layer on the prepared baking sheet. Brush both sides of each ring with the glaze.
  8. Bake for 15 minutes.
  9. Flip the rings carefully with a spatula and brush with any remaining glaze.
  10. Bake for another 10-15 minutes until edges are deep golden brown and centers are tender.
  11. Sprinkle with flaky sea salt immediately after removing from oven.
  12. Let rest for 2-3 minutes before serving. Garnish with fresh thyme if desired.

Notes

Don’t overcrowd the pan—give each ring space to caramelize. Cut rings evenly for consistent cooking. If rings brown too quickly but aren’t tender, tent with foil for last 5 minutes. Save seeds to roast as a snack. For dairy-free, use coconut oil instead of butter. For lower sugar, reduce maple syrup to 2 tablespoons.
