  • 1 cup wild rice blend (uncooked, such as Lundberg brand)
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 celery ribs, diced
  • 4 garlic cloves, minced
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • 2 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 1 cup whole milk or half-and-half
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prep your vegetables: Dice the onion, carrots, and celery into roughly ¼-inch cubes. Mince the garlic.
  2. Layer everything in the crockpot: Add the diced vegetables, minced garlic, chicken breasts (can be frozen), wild rice blend, chicken broth, water, dried thyme, crushed rosemary, bay leaves, 1 teaspoon salt, and ½ teaspoon black pepper. Stir gently to combine.
  3. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and the rice is cooked.
  4. About 30 minutes before serving, remove the chicken breasts from the crockpot and shred with two forks. Return the shredded chicken to the pot. Remove and discard the bay leaves.
  5. Make the roux: In a small saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes, stirring constantly, until pale golden. Slowly whisk in the milk or half-and-half, stirring until smooth and thickened, about 2 minutes.
  6. Pour the roux mixture into the crockpot and stir well. Let cook for another 10-15 minutes on low until the soup thickens slightly. Taste and adjust salt and pepper as needed.
  7. Serve hot, garnished with fresh parsley and a squeeze of lemon if desired.

Notes

For a gluten-free version, use cornstarch mixed with cold water instead of flour. For dairy-free, use olive oil and unsweetened oat milk. The soup thickens as it sits; add extra broth when reheating. Wild rice blends vary in cooking time; check at the minimum time to avoid mushy rice. Do not lift the lid during cooking. Season in layers and adjust at the end.
