Whipped Feta Toast with Roasted Peaches and Hot Honey

A flavorful and easy-to-make toast featuring creamy whipped feta, smoky roasted peaches, and a spicy-sweet hot honey drizzle. Perfect for brunch or a light dinner.

  • 8 ounces feta cheese (block style recommended)
  • 1/2 cup full-fat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • Fresh cracked black pepper to taste
  • 2 large ripe peaches, halved and pitted
  • 2 tablespoons honey (for roasting peaches)
  • 1/4 teaspoon chili flakes (adjust to heat preference)
  • 1 tablespoon olive oil (for roasting)
  • 1/4 cup honey (for hot honey drizzle)
  • 1/2 teaspoon red pepper flakes (or more for bolder heat)
  • 4 thick slices crusty bread (sourdough recommended)
  • Optional: fresh herbs like thyme or basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve and pit the peaches, arrange cut-side up on the baking sheet. Drizzle with olive oil and 2 tablespoons honey, then sprinkle with 1/4 teaspoon chili flakes evenly.
  3. Roast peaches for 20-25 minutes until tender and caramelized, watching carefully to avoid burning.
  4. While peaches roast, crumble feta into a food processor or mixing bowl. Add Greek yogurt, lemon juice, olive oil, and cracked black pepper. Blend or whip until creamy and smooth.
  5. Just before peaches are done, toast the bread slices until golden and crisp but still soft inside.
  6. In a small saucepan, gently warm 1/4 cup honey over low heat. Stir in 1/2 teaspoon red pepper flakes and remove from heat. Let infuse for 5 minutes, then strain if desired.
  7. Spread a generous layer of whipped feta onto each toast slice. Top with warm roasted peaches and spoon any juices on top.
  8. Drizzle hot honey over the assembled toast.
  9. Garnish with fresh herbs and a pinch of flaky sea salt if desired. Serve immediately while peaches are warm and bread is crisp.

Notes

If feta is salty, adjust or omit added salt. For gluten-free, use gluten-free bread. For dairy-free, substitute whipped feta with silken tofu blended with lemon juice and olive oil. Assemble toast just before serving to keep bread crisp and peaches warm. Hot honey can be adjusted for heat preference.
