  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1215 small flour or corn tortillas
  • 2 cups shredded iceberg lettuce or cabbage blend
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup shredded Mexican cheese blend
  • 1 cup sour cream
  • 1/2 cup fresh cilantro leaves, roughly chopped
  • 2 jalapeños, thinly sliced (seeds removed for milder heat)
  • 1 cup prepared pico de gallo
  • 1 cup guacamole
  • 1 lime, cut into wedges
  • Optional: pickled red onions, radish slices, or hot sauce

Instructions

  1. Cook the beef: Heat a large skillet over medium-high heat. Add ground beef and cook until browned, about 6-8 minutes, breaking it apart. Leave about 1 tablespoon of fat. Add diced onion and cook 2 minutes until softened. Stir in garlic, chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Cook 1 minute until fragrant. Pour in beef broth and simmer 3-4 minutes until liquid reduces and coats the meat. Remove from heat.
  2. Warm the tortillas: Wrap tortillas in a clean kitchen towel and microwave 30-45 seconds until warm and pliable. Alternatively, heat in a dry skillet over medium heat for 30 seconds per side. Keep wrapped in towel.
  3. Prep fresh ingredients: Halve cherry tomatoes, slice jalapeños, chop cilantro, and shred lettuce. If making pico de gallo or guacamole, prepare now. Mix sour cream with a squeeze of lime juice and a pinch of salt for crema.
  4. Assemble the board: Place small bowls of sour cream crema, guacamole, and pico de gallo on the board in a triangle pattern. Mound seasoned beef near center, slightly off to one side. Pile shredded lettuce opposite the beef. Arrange cheese, tomatoes, cilantro, and jalapeños in small piles around the board. Tuck lime wedges and any pickled onions or radishes into empty spaces. Stack warm tortillas in a napkin-lined basket or at one end of the board.
  5. Final touches: Check for bare spots and add extra tortilla chips or cilantro if needed. Serve immediately, letting guests build their own tacos directly from the board.

Notes

Most components can be prepped 4-6 hours ahead. Assemble board no more than 30 minutes before serving. For vegetarian version, replace beef with seasoned black beans. For low-carb, use lettuce wraps instead of tortillas. Leftover beef keeps 3-4 days in the fridge and makes great taco salads or nachos.
