  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup water
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 1/2 cups Monterey Jack cheese, shredded
  • 1/2 cup queso fresco, crumbled
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 1/2 cup pickled jalapeños
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1 avocado, sliced or diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven’s broiler to high. Position the rack about 6 inches from the heat source.
  2. Cook the seasoned beef: Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook for 5-6 minutes until browned and no longer pink. Drain excess fat if needed. Add chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Pour in the 1/4 cup water and stir. Let it simmer for 2 minutes until the liquid thickens into a light sauce.
  3. Prepare the sheet pan: Line a large sheet pan with aluminum foil or parchment paper. Spread the tortilla chips in an even layer.
  4. Layer the toppings: Sprinkle the seasoned beef evenly over the chips. Scatter the black beans and corn on top. Sprinkle the shredded cheddar and Monterey Jack evenly over everything.
  5. Broil to perfection: Place the sheet pan under the broiler for 3-5 minutes. Watch closely until cheese is bubbly and golden.
  6. Finish with fresh toppings: Remove the pan from the oven. Immediately sprinkle the crumbled queso fresco over the top. Add the cherry tomatoes, red onion, avocado slices, and pickled jalapeños. Dollop sour cream in small piles across the board.
  7. Garnish and serve: Sprinkle fresh cilantro over everything. Squeeze lime wedges over the top. Serve immediately.
