  • 1 ripe avocado, medium-sized
  • 1 tablespoon lime juice, freshly squeezed
  • 1 tablespoon mayonnaise
  • 1–2 teaspoons hot sauce (e.g., Cholula or Valentina)
  • 1 small jalapeño, seeded and finely minced (about 1 tablespoon)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and black pepper, to taste
  • Thinly sliced jalapeño rounds, for topping (optional)
  • Smoked paprika, for sprinkling
  • Fresh cilantro leaves, for garnish (optional)
  • Flaky sea salt, for finishing

Instructions

  1. Hard-boil the eggs: Place the eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for 10-12 minutes (10 for slightly softer centers, 12 for fully set). While they cook, prepare an ice bath—a bowl of cold water with a handful of ice cubes. When the timer goes off, transfer the eggs to the ice bath and let them cool for at least 5 minutes.
  2. Peel and halve the eggs: Gently tap each egg on the counter to crack the shell all over, then peel under cold running water. Pat the eggs dry with a paper towel. Using a sharp knife, slice each egg in half lengthwise. Carefully pop out the yolks into a small bowl. Arrange the egg white halves on a serving platter, cut-side up.
  3. Make the filling: To the bowl with the egg yolks, add the avocado, lime juice, mayonnaise, hot sauce (start with 1 teaspoon), minced jalapeño, garlic powder, onion powder, and a pinch of salt and pepper. Mash everything together with a fork until smooth and creamy. Taste and adjust seasoning—add more hot sauce, salt, or lime juice as desired.
  4. Fill the egg whites: Spoon the filling into a piping bag or a zip-top bag with one corner snipped off. Pipe the filling into the egg white halves, dividing it evenly. Alternatively, spoon the filling in and smooth the tops with the back of a spoon.
  5. Garnish and serve: Top each deviled egg with a thin slice of jalapeño, a sprinkle of smoked paprika, and a tiny cilantro leaf if using. Finish with a pinch of flaky sea salt. Serve immediately, or refrigerate for up to 2 hours before serving.

Notes

For perfect hard-boiled eggs, use older eggs (a week or two old) and cool them in an ice bath immediately after cooking. To keep the filling bright green, pipe it into the egg whites as soon as it’s made and cover tightly with plastic wrap if storing. The heat level is customizable—start with 1 teaspoon of hot sauce and adjust to taste. The flavors meld and improve after a few hours in the fridge.
