  • 34 lbs pork shoulder (1.41.8 kg), well-marbled
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp chili powder
  • 1/4 cup honey (60 ml)
  • 2 chipotle peppers in adobo sauce, minced plus 1 tbsp adobo sauce
  • 1/4 cup apple cider vinegar (60 ml)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 12 small slider buns
  • Coleslaw (optional)

Instructions

  1. Trim any excessive fat off the pork shoulder. Pat dry with paper towels. Rub the pork all over with smoked paprika, chili powder, salt, and pepper. Set aside.
  2. In a mixing bowl, combine honey, minced chipotle peppers plus adobo sauce, apple cider vinegar, tomato paste, Worcestershire sauce, and minced garlic. Whisk until smooth.
  3. Spread sliced onion evenly at the bottom of the slow cooker insert. Place the seasoned pork shoulder on top. Pour the sauce evenly over the pork.
  4. Cover and cook on low for 8 hours or on high for 4-5 hours, until the pork is tender enough to shred easily with forks.
  5. Using two forks or tongs, shred the pork directly in the slow cooker, mixing it with the sauce and onions. Taste and adjust seasoning if needed.
  6. Warm the slider buns in the oven at 350°F (175°C) for about 5 minutes or until slightly toasted but still soft.
  7. Assemble the sliders by piling the pulled pork generously onto each bun bottom. Top with coleslaw if using, then cover with the bun tops. Serve immediately.

Notes

If the sauce is too thin after shredding, remove the pork and simmer the sauce on the stovetop to reduce and thicken before mixing back in. Let the pork rest for 10-15 minutes after shredding to keep it moist. Toast slider buns lightly before assembling to prevent sogginess. Adjust chipotle peppers to control heat level. For gluten-free, use gluten-free buns or lettuce wraps.
