  • 1 lb (450g) ground beef, lean or regular
  • 2 tbsp taco seasoning (blend of chili powder, cumin, garlic powder, paprika, salt, and pepper)
  • 1/4 cup (60ml) water
  • 2 cups (200g) three-cheese blend (sharp cheddar, Monterey Jack, mozzarella), shredded fresh
  • 1 cup (170g) black beans, drained and rinsed
  • Fresh sliced or pickled jalapeños, to taste
  • 23 stalks green onions, thinly sliced
  • 1 medium tomato, diced
  • 1/2 cup (120ml) sour cream
  • A handful fresh cilantro, chopped (optional)
  • 1 tbsp (15ml) olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spatula.
  3. Stir in 2 tbsp taco seasoning and 1/4 cup (60ml) water. Cook until beef is browned and cooked through, about 8-10 minutes. Drain excess fat if needed.
  4. While beef cooks, rinse and drain black beans, slice jalapeños, dice tomato, and thinly slice green onions.
  5. On a baking sheet, spread half the tortilla chips evenly.
  6. Sprinkle half the cooked beef over the chips, followed by half the black beans, tomatoes, jalapeños, and green onions.
  7. Generously sprinkle 1 cup (100g) of the three-cheese blend over the toppings.
  8. Repeat layering with remaining chips, beef, beans, tomatoes, jalapeños, green onions, and cheese blend.
  9. Bake in the oven for 10-12 minutes or until cheese is melted and bubbly. Watch closely to prevent burning.
  10. Remove from oven and add dollops of sour cream and sprinkle chopped fresh cilantro.
  11. Serve immediately while hot and melty.

Notes

Layering ingredients and cheese in two rounds keeps chips crispy and cheese evenly melted. Shred cheese fresh for best meltability. Drain excess fat from beef to avoid greasy nachos. For extra melt, broil 1-2 minutes watching closely. Store leftovers in airtight container up to 2 days; reheat in oven to keep chips crisp.
