Savory Grilled Peach & Burrata Salad Recipe (Easy Summer Side)

A quick and easy summer salad featuring warm, smoky grilled peaches paired with cold, creamy burrata and a sweet-tart balsamic drizzle. Perfect for entertaining or a light meal.

  • 4 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese (12 balls)
  • 3 cups arugula or mixed greens, washed and dried
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish (6-8 leaves, torn if large)
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey or brown sugar (optional)

Instructions

  1. Make the balsamic drizzle: Pour balsamic vinegar into a small saucepan over medium heat. Add honey or brown sugar if using, and stir until dissolved. Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until reduced by half and syrupy. Remove from heat and let cool.
  2. Preheat grill or grill pan to medium-high heat (about 400°F).
  3. Prepare peaches: Brush cut sides of peach halves lightly with olive oil and season with a tiny pinch of salt.
  4. Grill peaches: Place cut-side down on hot grill. Cook undisturbed for 3-4 minutes until grill marks form. Flip and cook for another 2-3 minutes on skin side. Peaches should be slightly softened but still hold their shape. Transfer to a plate and let cool slightly.
  5. Assemble salad: Spread arugula or mixed greens on a large serving platter. Arrange grilled peach halves on top, cut-side up. Place burrata in the center. Drizzle cooled balsamic reduction over everything, focusing on burrata and peaches. Season with black pepper and flaky sea salt.
  6. Garnish with torn fresh basil leaves. Serve immediately while peaches are warm and burrata is cold.

Notes

For best results, use ripe but firm peaches. Take burrata out of fridge 15-20 minutes before serving for optimal creaminess. Watch balsamic reduction closely to avoid burning. Leftovers: store grilled peaches separately for up to 2 days; balsamic reduction keeps in fridge for up to 2 weeks.
