Instructions

  1. Activate the yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-7 minutes until foamy.
  2. Make the dough: In a large mixing bowl, whisk together flour and salt. Add olive oil and yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 8-10 minutes until smooth and slightly elastic.
  4. Let it rise: Place dough in a lightly oiled bowl, cover, and let rest in a warm spot for about 1 hour or until doubled in size.
  5. Prepare the filling: Mix softened cream cheese, chopped dill, lemon zest, and capers until creamy and well combined.
  6. Roll out the dough: Punch down dough and roll into a 12×10 inch rectangle on a floured surface.
  7. Assemble pinwheels: Spread cream cheese mixture evenly over dough, leaving a small border. Layer smoked salmon on top. Roll dough tightly into a log.
  8. Cut and top: Slice log into 12 equal pinwheels. Place cut-side up on parchment-lined baking sheet. Brush with egg wash and sprinkle everything bagel seasoning.
