A quick and easy homemade summer drink combining fresh strawberries, lemons, honey, and ice for a refreshing, tangy slushie perfect for hot days.

  • 2 cups fresh strawberries, hulled and halved (about 10 oz)
  • 3 medium lemons, juiced (approximately ½ cup / 4 fl oz lemon juice)
  • 2 to 3 tablespoons honey (adjust to taste)
  • 2 cups ice cubes (about 10 oz)
  • ½ cup water (4 fl oz)
  • Optional: fresh mint leaves for garnish or a splash of sparkling water for fizz

Instructions

  1. Rinse and hull the strawberries, then halve or quarter them depending on size. Juice the lemons, removing seeds to yield about ½ cup of fresh lemon juice.
  2. Place the strawberries, lemon juice, honey, and water into the blender jar. Add fresh mint leaves now if desired.
  3. Pulse the mixture a few times to break up the fruit, then blend on high until smooth and bright pink with no chunks.
  4. Add the ice cubes to the blender and pulse in short bursts, blending until you reach a thick, frosty slushie texture that is still pourable. Add a splash more water if the mixture is too thick.
  5. Taste and adjust sweetness or tartness by adding more honey or lemon juice as desired. Blend briefly again if additions are made.
  6. Pour into tall glasses, garnish with a strawberry slice or mint sprig, and serve immediately for best icy refreshment.

Notes

Use ripe, fresh strawberries for natural sweetness and vibrant color. Pulse ice gently to avoid watery slush. Serve immediately or chill glasses beforehand to keep slushie cold longer. Frozen strawberries can be used if thawed slightly. For vegan or sugar-free options, substitute honey with maple syrup, agave nectar, or sugar-free sweeteners like stevia or erythritol.
