  • 2 large eggs plus 1 egg yolk
  • 1 cup (240ml) heavy cream
  • 1/3 cup (65g) granulated erythritol or allulose
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Put a kettle of water on to boil for the water bath.
  2. In a medium mixing bowl, whisk 2 whole eggs and 1 egg yolk until fully combined and slightly frothy, about 30 seconds.
  3. Add pumpkin puree and whisk until fully incorporated. The mixture will look thick and slightly grainy.
  4. Add heavy cream, sweetener, vanilla extract, pumpkin pie spice, cinnamon, and salt. Whisk until sweetener is dissolved and mixture is smooth, about 1 minute. Taste a tiny dab to check sweetness—it should taste slightly too sweet as it will mellow during baking.
  5. Divide custard mixture evenly among four 6-ounce ramekins.
  6. Place ramekins in a large baking dish. Carefully pour hot water into the dish until it reaches halfway up the sides of the ramekins.
  7. Bake for 28 to 35 minutes, until edges are set and centers jiggle slightly when shaken (like firm Jell-O).
  8. Remove from oven and let ramekins sit in water bath for 5 minutes, then transfer to a wire rack to cool completely. Serve warm, at room temperature, or chilled.

Notes

The water bath is essential for a silky texture—do not skip it. For best results, bring eggs and cream to room temperature before starting. Custards can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. To reheat, place in a 300°F oven for 10 minutes (do not microwave).
