  • 4 cups low-sodium chicken broth

  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper

  • 1 bay leaf

Instructions

  1. Prep your ingredients: dice onion, carrots, and celery into ½-inch pieces; mince garlic; slice kielbasa into ½-inch rounds; open cans of beans; measure broth and spices.
  2. Heat olive oil in a large Dutch oven over medium-high heat until shimmering.
  3. Add sliced kielbasa in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Stir and cook for another 2 minutes. Transfer kielbasa to a plate, leaving rendered fat in the pot.
  4. Reduce heat to medium. Add onion, carrots, and celery. Cook, stirring occasionally, for 4-5 minutes until onions are translucent and carrots have softened. Scrape up any browned bits from the bottom.
  5. Stir in garlic, dried thyme, smoked paprika, black pepper, and red pepper flakes (if using). Cook for 30-60 seconds until fragrant.
  6. Pour in chicken broth and both cans of undrained beans. Stir, scraping the bottom of the pot. Add bay leaf.
  7. Bring to a gentle boil, then reduce heat to medium-low. Return browned kielbasa to the pot. Simmer uncovered for 8-10 minutes until broth has thickened slightly and flavors have melded.
  8. Remove bay leaf. Taste and adjust seasoning with salt if needed (start with ¼ teaspoon). Add more black pepper or red pepper flakes if desired.
  9. Ladle soup into bowls. Top with fresh parsley and Parmesan cheese. Serve with crusty bread or crackers.

Notes

Don’t drain the beans—the starchy liquid creates a velvety broth. Brown the kielbasa well for maximum flavor. Go easy on salt until the end, as kielbasa and beans are already salty. For a thicker soup, mash some beans against the pot. Leftovers taste even better the next day.
