Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 3 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon cold unsalted butter, cut into small pieces
  • 3/4 cup whole milk

Instructions

  1. Start the aromatics (5 minutes): Place your Dutch oven or large pot over medium heat and add the 2 tablespoons of butter. Let it melt completely. Once the butter is melted and bubbly, add the diced onion, carrots, and celery. Stir to coat them in the butter. Cook for about 4-5 minutes, stirring occasionally, until the onions turn translucent and the carrots begin to soften.
  2. Add garlic and flour (2 minutes): Stir in the minced garlic and cook for 30 seconds until fragrant. Sprinkle the 1/4 cup of flour evenly over the vegetables. Stir constantly for about 1-2 minutes until the mixture looks slightly golden and smells toasty.
  3. Build the broth (3 minutes): Slowly pour in the 4 cups of chicken broth while stirring continuously to prevent lumps. Add the 1 cup of milk, dried thyme, and dried rosemary. Stir together. Increase the heat to medium-high and bring the mixture to a gentle simmer (small bubbles breaking the surface, not a rolling boil). This should take about 2-3 minutes.
  4. Add the chicken (2 minutes): Once the broth is simmering, stir in the 3 cups of shredded cooked chicken. Let it heat through for about 2 minutes. Taste the broth and season with salt and pepper. Reduce the heat to low to keep the broth at a gentle simmer while you make the dumplings.
  5. Make the dumpling dough (5 minutes): In a medium mixing bowl, whisk together the 1 1/2 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of garlic powder. Add the 1 tablespoon of cold butter pieces. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter pieces remaining. Make a well in the center and pour in the 3/4 cup of milk. Stir with a fork just until combined — a few lumps are …
  6. Drop the dumplings (2 minutes): Using a small cookie scoop or two spoons, drop rounded spoonfuls of the dumpling dough into the simmering broth. Space them out evenly. You should get about 12-14 dumplings depending on size. Do not stir the pot after adding the dumplings.
  7. Cook the dumplings (12-15 minutes): Cover the pot tightly with the lid and let the dumplings cook undisturbed. Set a timer for 12 minutes. After 12 minutes, lift the lid carefully. The dumplings should be puffed up and cooked through. To test, insert a toothpick into the center of a dumpling; it should come out clean or with a few moist crumbs. If they need more time, cover and cook for another 2-3 minutes.
  8. Finish and serve (1 minute): Once the dumplings are cooked, remove the pot from the heat. Let it rest for 1-2 minutes. Sprinkle the fresh parsley over the top. Ladle the chicken and dumplings into bowls, making sure each serving gets a good mix of broth, chicken, and a few dumplings. Serve immediately.

Notes

For best results, use cold butter in the dumplings and do not overmix the dough. The broth will thicken as it sits. If the dumplings are gummy, they likely needed more covered cooking time.
