A refreshing and easy salad made with crisp cucumbers, juicy cherry tomatoes, creamy feta, and fresh dill, tossed in a simple red wine vinaigrette. Ready in 15 minutes, it’s the perfect side dish for busy weeknights or summer gatherings.

  • 2 large or 3 medium English cucumbers (or regular cucumbers, peeled and seeded)
  • 2 cups cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 4 ounces feta cheese, crumbled
  • 3 tablespoons fresh dill, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Prep your cucumbers (3 minutes): Wash cucumbers. If using English cucumbers, leave skin on; cut off ends, slice in half lengthwise, then cut into thin half-moons about 1/4 inch thick. If using regular cucumbers, peel, scoop out seeds, then slice.
  2. Halve your tomatoes (2 minutes): Wash and dry cherry tomatoes. Cut each in half through the stem end. If using larger tomatoes, chop into bite-sized pieces.
  3. Slice the red onion (2 minutes): Peel onion and cut off root end. Slice as thinly as possible (almost translucent). Place sliced onion in a small bowl of cold water while prepping the rest to reduce sharpness.
  4. Make the dressing (2 minutes): In a small bowl or mason jar, combine olive oil, red wine vinegar, salt, and black pepper. Whisk or shake until well combined. Taste and adjust seasoning if needed.
  5. Combine everything (3 minutes): Drain the sliced onion and pat dry. In a large bowl, combine cucumbers, tomatoes, and onion. Pour dressing over top and toss gently until coated.
  6. Add the feta and dill (2 minutes): Crumble feta over the salad, then sprinkle chopped dill on top. Gently toss once more until feta and dill are distributed. Some feta will break down into the dressing, creating a creamy coating.
  7. Let it rest (5 minutes, optional but recommended): Let salad sit at room temperature for 5-10 minutes before serving to allow flavors to meld. Do not drain the liquid that forms—it’s flavorful.

Notes

For best texture, serve at room temperature. If making ahead, salt cucumbers and let drain to prevent watery salad. Fresh dill is essential; dried dill is not recommended. For a dairy-free version, omit feta or use vegan feta. Add a pinch of sugar to dressing if tomatoes are not sweet.
