  • 1 medium yellow onion, diced
  • 8 oz (225g) cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup (240ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup (120ml) sour cream, room temperature
  • 8 oz (225g) egg noodles
  • Fresh parsley, for garnish
  • Salt and black pepper, to taste

Instructions

  1. Cook the egg noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain and set aside.
  2. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Season with salt and pepper. Do not drain the fat.
  3. Sauté the aromatics: Add the diced onion to the skillet and cook for 2 minutes until softened. Add the sliced mushrooms and cook for 2-3 minutes until they release liquid and start to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Create the sauce base: Sprinkle the flour over the beef and mushroom mixture. Stir constantly for 1 minute to cook out the raw flour taste. The mixture will become thick and pasty.
  5. Add the liquids: Slowly pour in the beef broth while stirring constantly. Add the Worcestershire sauce and Dijon mustard. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens to a gravy-like consistency.
  6. Finish with sour cream: Remove the skillet from the heat and let it sit for 30 seconds. Stir in the sour cream until the sauce is smooth and creamy. Taste and adjust seasoning with salt and pepper.
  7. Combine and serve: Add the cooked egg noodles to the skillet and toss gently to coat. Alternatively, serve the stroganoff over the noodles. Garnish with fresh parsley and serve immediately.

Notes

For best results, let the sour cream come to room temperature before adding to prevent curdling. Do not drain the beef fat—it adds flavor to the sauce. If the sauce is too thick, add a splash of broth. For a gluten-free version, use a gluten-free flour blend or cornstarch slurry.
