  • 1 rotisserie chicken, meat shredded and bones reserved
  • 8 cups low-sodium chicken broth
  • 1 large yellow onion, halved
  • 3 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon salt, plus more to taste
  • 2 tablespoons unsalted butter or olive oil
  • 3 medium carrots, peeled and diced into 1/2-inch pieces
  • 3 celery stalks, diced into 1/2-inch pieces
  • 1 small zucchini, diced (optional)
  • 6 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice

Instructions

  1. Shred the chicken. Pull all the meat off the rotisserie chicken, discarding the skin if you prefer. Separate the meat into two piles—the breast meat for the soup and the dark meat for snacking or another meal. Set the bones aside. You should have about 3 to 4 cups of shredded chicken.
  2. Make the quick broth. Place the chicken bones in your large pot. Add the halved onion, smashed garlic, bay leaves, peppercorns, and 1 teaspoon of salt. Pour in the 8 cups of chicken broth. Bring this to a boil over high heat, then reduce to a simmer. Let it bubble gently for exactly 15 minutes.
  3. Start the vegetables. While the broth simmers, melt the butter in a separate large skillet over medium heat. Add the diced carrots, celery, and zucchini (if using). Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften and the carrots turn bright orange. Don’t let them brown.
  4. Strain the broth. After 15 minutes, place your fine-mesh strainer over a large bowl or clean pot. Carefully pour the broth through the strainer, catching all the bones and aromatics. Discard the solids. Rinse out your original pot and return the strained broth to it. You should have about 6 to 7 cups of richly flavored liquid.
  5. Cook the noodles. Bring the strained broth back to a gentle boil. Add the egg noodles and cook according to package directions, usually about 6 to 8 minutes for dried noodles. Stir occasionally to prevent sticking.
  6. Add the chicken and vegetables. Once the noodles are tender, reduce the heat to low. Stir in the sautéed vegetables and the shredded chicken. Let everything warm through together for about 2 minutes.
  7. Finish with freshness. Remove the pot from the heat. Stir in the fresh parsley and lemon juice. Taste the broth and adjust the salt and pepper. I usually add another 1/2 teaspoon of salt and a few cracks of black pepper at this stage.
  8. Rest before serving. Let the soup sit for 5 minutes off the heat. This allows the flavors to meld and the noodles to absorb a bit more broth.

Notes

For leftovers, cook noodles separately and add to individual bowls before ladling soup to prevent mushy noodles. The lemon juice is key for brightening flavors. Don’t boil the chicken after adding it back to the pot to keep it tender.
