A quick and easy slow cooker wassail with orange and cloves that tastes like you fussed, but you really didn’t. Perfect for busy weeknights when you need a warm, comforting drink.

Ingredients

Scale
  • 6 cups apple juice or apple cider
  • 2 cups orange juice
  • 1 large orange, sliced into rounds
  • 1 tablespoon whole cloves
  • 3 cinnamon sticks
  • ¼ cup honey or maple syrup, plus more to taste
  • 2-inch piece fresh ginger, sliced
  • 2 whole star anise (optional)
  • 1 cup water

Instructions

  1. Wash the orange thoroughly and slice it into thin rounds, about ¼-inch thick. Slice the fresh ginger into thin coins.
  2. Pour the apple juice, orange juice, water, and honey into the slow cooker. Stir to combine.
  3. Add the cinnamon sticks, whole cloves, star anise, and sliced ginger. Arrange the orange slices on top or push them into the liquid.
  4. Cover and cook on LOW for 3-4 hours or on HIGH for 1½-2 hours.
  5. After about 2 hours on LOW, taste and adjust sweetness by adding more honey if desired.
  6. Optional: Remove the cloves and star anise with a slotted spoon to prevent the flavor from becoming too intense. Cinnamon sticks can remain.
  7. Ladle the wassail into mugs, garnishing each serving with an orange slice or cinnamon stick. Serve warm.

Notes

Don’t overdo the cloves. Whole cloves infuse gently; ground cloves can overwhelm. Taste as you go and adjust sweetness. Keep warm on WARM setting after cooking to avoid overcooking. For a smoother drink, strain through a fine-mesh sieve before serving.
