  • 3 cups fresh broccoli florets
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • 1/4 cup water or beef broth
  • Optional: red pepper flakes or sliced chili for heat

Instructions

  1. Slice the beef thinly to about 1/8-inch thickness against the grain (about 5 minutes).
  2. Marinate the beef in a mixing bowl with 2 tablespoons soy sauce and 1 teaspoon cornstarch. Toss well and set aside for at least 5 minutes.
  3. Wash and cut broccoli into bite-sized florets. Peel and thinly slice stalks if using.
  4. Mix the stir-fry sauce by combining the remaining 1 tablespoon soy sauce, oyster sauce, sesame oil, and 1/4 cup water or beef broth in a small bowl. Set aside.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat. Add beef in a single layer and sear without stirring for 1 minute, then stir-fry for 1-2 minutes until mostly cooked. Remove beef and set aside.
  6. Add remaining 1 tablespoon vegetable oil to the pan. Stir-fry minced garlic and ginger for 20-30 seconds until fragrant.
  7. Add broccoli florets and stir-fry for 2-3 minutes. Pour in the prepared sauce and cover the pan to steam for 2 minutes.
  8. Return beef to the pan and stir-fry everything together for 1-2 minutes until the sauce thickens and coats the ingredients.
  9. Taste and adjust seasoning if needed. Add red pepper flakes for spice if desired.
  10. Serve immediately with steamed rice or noodles.

Notes

Freeze beef for 30 minutes before slicing for easier thin cuts. Avoid overcrowding the pan to get a good sear. Use tamari and gluten-free oyster sauce for a gluten-free version. Thaw frozen broccoli well to avoid sogginess. Reheat gently on stovetop to preserve texture.
