Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large bowl, combine the pitted tart cherries, sugar, cornstarch, bourbon, vanilla extract, almond extract (if using), and lemon zest. Stir gently to coat evenly and set aside.
  3. In another large bowl, whisk together flour, baking powder, salt, and sugar. Add cold cubed butter and cut into the flour mixture using a pastry cutter or two forks until coarse crumbs with pea-sized bits form.
  4. Pour the milk or buttermilk into the dry mixture and stir gently just until the dough comes together. Avoid overmixing.
  5. Pour the cherry filling into the prepared baking dish and spread evenly. Drop spoonfuls of biscuit dough over the cherries, leaving some gaps.
  6. Bake for 35–40 minutes until the biscuit topping is golden brown and the cherry filling bubbles around the edges. Rotate the dish halfway through baking for even browning.
  7. Let the cobbler cool for about 15 minutes before serving to allow the filling to thicken. Serve warm with vanilla ice cream or whipped cream.
