  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) fresh lemon juice
  • ½ cup (120ml) salted caramel sauce (homemade or store-bought)
  • 1 cup (90g) rolled oats (old-fashioned)
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) cold unsalted butter, cut into small cubes
  • For the Quick Salted Caramel Sauce (optional):
  • 1 cup (200g) granulated sugar
  • 6 tablespoons (90g) unsalted butter, cut into pieces
  • ½ cup (120ml) heavy cream, at room temperature
  • 1 teaspoon flaky sea salt (like Maldon), plus more for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven. Lightly butter the inside of a 9×13-inch baking dish.
  2. Make the salted caramel sauce (if using homemade): In a small saucepan over medium heat, melt 1 cup granulated sugar, stirring occasionally, until it turns deep amber (6-8 minutes). Remove from heat, whisk in 6 tablespoons butter (careful of bubbling), then slowly whisk in ½ cup heavy cream until smooth. Stir in 1 teaspoon flaky sea salt. Let cool for 10 minutes. You’ll use half for the filling and save the rest for drizzling.
  3. Prepare the apples: Peel, core, and slice apples into ¼-inch thick wedges. In a large bowl, toss with ¼ cup granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and 1 tablespoon lemon juice. Drizzle in ¼ cup of the salted caramel sauce and toss again until glossy.
  4. Make the oat crumble topping: In a medium bowl, whisk together 1 cup rolled oats, ¾ cup flour, ½ cup brown sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add cold butter cubes and use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture resembles coarse sand with some pea-sized butter lumps.
  5. Assemble the crisp: Spread the apple mixture evenly in the prepared baking dish. Drizzle another ¼ cup of salted caramel sauce over the top. Sprinkle the oat crumble evenly over the apples, covering them completely. Do not press down.
  6. Bake: Place the dish on a baking sheet. Bake for 35-40 minutes, until the topping is golden brown and the filling is bubbling around the edges. If the crumble browns too quickly after 25 minutes, tent loosely with foil.
  7. Cool and finish: Let the crisp cool on a wire rack for at least 15 minutes. Just before serving, warm the remaining salted caramel sauce and drizzle over the top. Sprinkle with a pinch of flaky sea salt.

Notes

Don’t skip the flour in the filling—it thickens the juices. Keep butter cold for a crumbly topping. Let the crisp rest before serving to allow juices to thicken. For a nuttier flavor, toast the oats first. Store leftovers in the refrigerator for up to 5 days; reheat in a 350°F oven for 10-15 minutes to re-crisp.
