  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/4 cup (60 ml) vodka or substitute with cold water for non-alcoholic
  • 1 package (3 oz / 85 g) unflavored gelatin
  • 1/2 cup (120 ml) cold water
  • 1 cup (240 ml) coconut milk (full fat preferred)
  • 1/4 cup (50 g) granulated sugar
  • 1 tsp vanilla extract (optional)
  • 1 package (3 oz / 85 g) blueberry or berry-flavored gelatin
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/4 cup (60 ml) vodka or cold water
  • Mini clear plastic shot cups or silicone mold cups (approx. 1.5 oz / 45 ml each)

Instructions

  1. Prepare the Red Layer: Dissolve cherry gelatin powder in 1 cup boiling water, stir for 2 minutes until dissolved. Add 1/2 cup cold water and 1/4 cup vodka or cold water. Mix gently. Pour about 1 tablespoon into each shot cup. Refrigerate for 30 minutes until firm but tacky.
  2. Make the White Coconut Layer: Sprinkle unflavored gelatin over 1/2 cup cold water; let bloom for 5 minutes. Heat coconut milk and sugar in a saucepan over low heat until sugar dissolves (do not boil). Remove from heat. Stir bloomed gelatin into warm coconut milk until dissolved. Add vanilla extract if using. Cool to room temperature, stirring occasionally.
  3. Add the White Layer: Spoon about 1 tablespoon of coconut mixture on top of each red layer. Refrigerate for 30 minutes until set.
  4. Prepare the Blue Layer: Dissolve blueberry gelatin in 1 cup boiling water, stir for 2 minutes. Add 1/2 cup cold water and 1/4 cup vodka or cold water. Let cool slightly but not set.
  5. Add the Blue Layer: Gently pour or spoon blue gelatin on top of the white layer, filling each cup almost to the brim. Refrigerate for at least 1 hour until fully set.
  6. Serve: Remove from fridge just before serving. If using silicone molds, gently pop shots out onto a serving tray. Garnish with fresh berries or edible stars if desired.

Notes

Wait until each layer is set but still tacky before adding the next to prevent mixing. Use a steady hand and pour gelatin gently over the back of a spoon. Bloom gelatin properly for smooth texture. Adjust alcohol content carefully to ensure gelatin sets. Keep shot cups level in the fridge for even layers. Can substitute agar-agar for a vegan version and coconut cream for topping.
