These honey glazed rainbow carrots are a quick and easy side dish that looks like you spent hours fussing. With simple ingredients and a high-heat roasting technique, they caramelize beautifully and become the unexpected star of any meal.

Ingredients

  • Rainbow carrots, 2 pounds (about 900g)
  • Honey, 3 tablespoons (60ml)
  • Unsalted butter, 2 tablespoons (28g)
  • Olive oil, 1 tablespoon (15ml)
  • Salt, ½ teaspoon (3g)
  • Black pepper, ¼ teaspoon (0.5g)
  • Fresh thyme, 1 tablespoon (4g), plus extra for garnish
  • Optional garnish: Flaky sea salt, like Maldon

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven.
  2. Wash the rainbow carrots thoroughly under cold water, scrubbing gently to remove any dirt. Do not peel them. Trim off the green tops, leaving about ½ inch of the stem. If any carrots are very thick (more than 1 inch in diameter), halve them lengthwise.
  3. Place the carrots on a parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil and sprinkle with ½ teaspoon salt and ¼ teaspoon black pepper. Toss with your hands until every carrot is lightly coated. Spread them in a single layer.
  4. Roast for 15 minutes.
  5. While the carrots roast, make the honey glaze: In a small saucepan over medium heat, combine 3 tablespoons honey and 2 tablespoons butter. Stir occasionally until the butter melts and the mixture is smooth and bubbly, about 2-3 minutes. Remove from heat and stir in 1 tablespoon fresh thyme leaves. Set aside.
  6. After 15 minutes, remove the pan from the oven. Use tongs to flip each carrot over. Pour the honey-thyme glaze over the carrots, using a spoon or brush to coat them evenly.
  7. Roast for another 10-15 minutes, until the carrots are tender when pierced with a fork and the edges are starting to caramelize and get slightly crispy. Keep an eye on them during the last 5 minutes.
  8. Remove the pan from the oven and let the carrots rest for 2-3 minutes. Transfer to a serving platter, arranging the carrots in a single layer or a fan pattern. Spoon any remaining glaze from the pan over the top. Sprinkle with flaky sea salt and extra fresh thyme leaves.

Notes

Don’t overcrowd the pan; use two pans if needed. Watch the glaze carefully as honey burns quickly. For even cooking, sort carrots by size. Resist the urge to stir too much. Use room temperature butter for the glaze. For make-ahead: roast carrots until just tender (about 20 minutes total) without glaze, cool, refrigerate. Reheat at 350°F for 5 minutes, then add glaze and roast another 5-7 minutes.
