A hearty and comforting ribeye steak seared in garlic herb butter paired with crispy roasted baby potatoes. Ready in under 45 minutes, this recipe is perfect for busy weeknights or special occasions.

  • 2 ribeye steaks, about 10-12 ounces (280-340g) each, well-marbled
  • 4 tablespoons (57g) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 sprigs fresh rosemary, finely chopped
  • 2 sprigs fresh thyme, leaves stripped
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1 pound (450g) baby potatoes, halved or quartered
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: fresh lemon juice, a squeeze

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine softened butter with minced garlic, chopped rosemary, and thyme leaves. Mix well and set aside.
  3. Toss halved baby potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, shaking the pan halfway through.
  4. Pat ribeye steaks dry with paper towels. Season both sides generously with kosher salt and freshly cracked black pepper.
  5. Heat a cast-iron skillet over medium-high heat. Add 1 tablespoon olive oil and wait until shimmering.
  6. Place steaks in the skillet and sear for 4-5 minutes on the first side without moving them.
  7. Flip steaks and sear the other side for 3-4 minutes for medium-rare, adjusting time for preferred doneness.
  8. Check doneness with a meat thermometer (130°F/54°C for medium-rare) or use the finger test.
  9. Remove steaks from skillet and place on a warm plate or cutting board. Top each steak with a generous dollop of garlic herb butter. Let rest for 5-7 minutes.
  10. Sprinkle extra fresh thyme or rosemary over the roasted potatoes if desired.
  11. Serve steaks alongside roasted potatoes. Optionally, squeeze fresh lemon juice over the steak before serving.

Notes

Pat steaks dry before searing to get a good crust. Rest steaks after cooking to lock in juices. Use high oven temperature for crispy potatoes and shake pan halfway through roasting. Butter basting adds flavor and moisture. If dairy-free, substitute butter with plant-based spread.
