Perfect Easy Cranberry Orange Sauce with Rosemary

This quick and easy cranberry orange sauce with fresh rosemary comes together in under 20 minutes and uses simple ingredients. It’s perfect for weeknights or holiday meals, and the combination of tart cranberries, sweet orange, and piney rosemary is unbelievably delicious.

  • 12 oz (340 g) fresh cranberries
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (120 ml) fresh orange juice (from about 1 large orange)
  • 1 tablespoon orange zest
  • 1 sprig fresh rosemary (about 4 inches / 10 cm)
  • 1/4 cup (60 ml) water

Instructions

  1. Prep your ingredients (5 minutes): Rinse the cranberries in a colander and pick out any soft or damaged ones. Zest the orange before juicing it. Use a microplane to get the bright orange outer layer, avoiding the white pith. Cut the orange in half and juice it to get 1/2 cup of juice.
  2. Combine everything in the saucepan (2 minutes): Add the fresh cranberries, granulated sugar, fresh orange juice, orange zest, water, and the sprig of fresh rosemary to a medium saucepan. Do not stir yet.
  3. Bring it to a boil (3-4 minutes): Place the saucepan over medium-high heat. Stir occasionally with a wooden spoon to help the sugar dissolve. Once the mixture reaches a full, rolling boil, let it boil for exactly 1 minute.
  4. Reduce the heat and simmer (8-10 minutes): Turn the heat down to medium-low so the sauce is at a gentle simmer. Cook, stirring occasionally, until the cranberries have burst and the sauce has thickened to a jam-like consistency that coats the back of a spoon.
  5. Remove the rosemary sprig (30 seconds): Use tongs or a fork to remove the rosemary sprig. Some needles may have fallen off—leave them in. If you want a smoother sauce, strain through a fine-mesh strainer.
  6. Cool the sauce (30 minutes to 2 hours): Pour the sauce into a serving bowl or glass jar. Let it cool to room temperature. It will continue to thicken as it cools. Serve immediately or refrigerate.

Notes

The sauce will thicken significantly as it cools. If making ahead, it will be firm after a few hours in the fridge. Let it sit at room temperature for 15-20 minutes before serving if you want a looser sauce. The rosemary flavor becomes more pronounced after a day or two in the fridge. For a milder rosemary flavor, remove the sprig after 5 minutes of simmering.
