Instructions

  1. Peel and dice the russet potatoes into 1-inch cubes. Rinse in cold water to remove excess starch, then drain well.
  2. Place the diced potatoes in a slow cooker. Add the chicken broth, garlic powder, onion powder, 1/2 teaspoon salt, and a few cracks of black pepper. Stir to combine.
  3. Cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and easily pierced with a fork.
  4. Mash the potatoes in the slow cooker with a potato masher to your desired consistency (chunky or smooth). For a smooth soup, use an immersion blender.
  5. Temper the Greek yogurt: Scoop about 1/2 cup of hot soup liquid into a small bowl. Whisk in the Greek yogurt until smooth. Pour the mixture back into the slow cooker and stir gently.
  6. Stir in the shredded cheddar cheese until fully melted. Reserve some cheese and bacon for topping. Taste and adjust salt and pepper as needed.
  7. Turn off the slow cooker and let the soup rest for 5 minutes to thicken and meld flavors.
  8. Ladle the soup into bowls and top with reserved cheese, crumbled bacon, and chopped chives or green onions. Add a dollop of Greek yogurt or sour cream if desired.
