These creamy, pumpkin pie-flavored overnight oats come together in just 5 minutes and are perfect for busy mornings. Made with simple ingredients like rolled oats, pumpkin puree, and warm spices, they taste like dessert but are healthy enough for breakfast.

  • 1 cup milk (any kind)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup pumpkin puree (100% pure pumpkin)
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Pinch of salt
  • Optional: 1 tablespoon chia seeds
  • Optional toppings: chopped pecans or walnuts, extra maple syrup, whipped cream

Instructions

  1. In a medium bowl, combine rolled oats, cinnamon, ginger, nutmeg, cloves, and salt. Stir to distribute spices evenly.
  2. Add milk, Greek yogurt, pumpkin puree, maple syrup, and vanilla extract. Whisk until smooth and fully combined, breaking up any lumps of pumpkin.
  3. Stir in the oat-spice mixture until every oat is coated. If using chia seeds, stir them in now.
  4. Divide the mixture evenly into 4 mason jars or airtight containers, leaving about an inch of space at the top. Screw lids on tightly.
  5. Refrigerate for at least 6 hours or overnight.
  6. In the morning, stir the oats, add desired toppings, and enjoy cold or warm (microwave for 30-60 seconds if preferred).

Notes

For a gluten-free version, use certified gluten-free rolled oats. For a dairy-free version, use almond milk, oat milk, or coconut milk and a thick dairy-free yogurt. The flavor improves after a day or two in the fridge. If oats are too thick in the morning, stir in a tablespoon or two of milk.
