Sweet, salty, buttery, and ridiculously easy, these cranberry brie bites come together in under twenty minutes. They’re the perfect appetizer for family gatherings, holiday parties, or any occasion where you want something special without the stress.

Ingredients

Scale
  • 1 box (15-count) frozen mini phyllo shells
  • 4 ounces brie cheese
  • ½ cup whole berry cranberry sauce
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 pinch flaky sea salt
  • ¼ cup chopped walnuts or pecans (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Arrange the thawed phyllo shells on the sheet, leaving about an inch between each.
  2. Cut the brie into small cubes, about ½ inch (1.25 cm) each. You’ll need about 15 cubes, one per shell.
  3. Drain the cranberry sauce if using canned. Spoon it into a small bowl and remove any excess liquid.
  4. Fill each phyllo shell: Start with a small spoonful of cranberry sauce (about ½ teaspoon). Place one brie cube on top.
  5. Drizzle honey over each bite, using about ¼ teaspoon per shell.
  6. Sprinkle chopped rosemary and a pinch of flaky salt over the tops. If using nuts, add them now.
  7. Bake for 8-10 minutes, or until the brie is melted and bubbly and the phyllo edges are golden brown and crisp.
  8. Remove from the oven and let cool for 2-3 minutes before serving.
  9. Transfer to a serving platter and serve warm. Best within 15 minutes of baking.

Notes

Drain cranberry sauce thoroughly to prevent soggy cups. Let bites rest for 2-3 minutes after baking to avoid burning mouths. For make-ahead, assemble unbaked and refrigerate up to 24 hours, or freeze unbaked for up to 3 months. Reheat in a 300°F oven for 5-7 minutes.
