  • ¼ cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, chopped parsley, cilantro, thyme leaves, sea salt, and black pepper until well combined (about 3 minutes).
  2. Place chicken breasts in a large zip-top bag or shallow dish. Pour marinade over chicken, ensuring each piece is fully coated. Seal or cover and refrigerate for at least 30 minutes, ideally 1–2 hours (up to 8 hours maximum).
  3. Preheat grill to medium-high heat (around 400°F). If using charcoal, wait until coals are glowing red with a light layer of ash.
  4. Remove chicken from marinade, letting excess drip off. Place on grill and cook for 6–8 minutes per side, flipping only once per side.
  5. Check doneness with a meat thermometer; internal temperature should reach 165°F. Alternatively, cut into thickest part to ensure juices run clear and no pink remains.
  6. Transfer grilled chicken to a plate and let rest for 5 minutes before slicing.
  7. Serve warm or at room temperature with your favorite sides or salads.
