A hearty and healthy turkey chili with black beans that comes together in under 30 minutes. This smoky, flavorful chili is perfect for busy weeknights and tastes even better the next day.

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93/7 works best)
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 (15-ounce) can diced tomatoes with green chiles (like Rotel)
  • 1 (15-ounce) can crushed tomatoes
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • Juice of 1 lime (about 2 tablespoons)
  • ¼ cup fresh cilantro, chopped (optional)
  • Shredded cheddar cheese (for serving, optional)
  • Sour cream or Greek yogurt (for serving, optional)
  • Diced avocado (for serving, optional)
  • Tortilla chips or cornbread (for serving, optional)

Instructions

  1. Heat the oil: Place your pot over medium heat and add the olive oil. Let it warm up for about 30 seconds until it shimmers.
  2. Cook the aromatics: Add the diced onion and cook for 4-5 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for another 30 seconds, just until fragrant.
  3. Brown the turkey: Add the ground turkey to the pot. Break it up with a wooden spoon into small crumbles. Cook for 5-6 minutes, stirring occasionally, until no pink remains.
  4. Add the spices: Sprinkle the chili powder, smoked paprika, cumin, oregano, salt, and pepper over the turkey. Stir and cook for 1 minute to bloom the spices.
  5. Add the tomatoes: Pour in the diced tomatoes with green chiles and the crushed tomatoes. Stir well, scraping up any browned bits from the bottom of the pot.
  6. Add the beans and broth: Stir in the drained and rinsed black beans and the chicken broth. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 15 minutes, stirring occasionally.
  7. Finish with lime: Remove from heat. Stir in the lime juice and fresh cilantro if using. Taste and adjust seasoning.
  8. Serve: Ladle into bowls and top with your favorite fixings.

Notes

For a thicker chili, simmer a few extra minutes uncovered or mash some black beans before adding. Chili tastes even better the next day. For a vegetarian version, omit turkey and add an extra can of black beans plus pinto beans; use vegetable broth. For a spicier version, add diced jalapeño with onion and ½ teaspoon cayenne pepper.
