Healthy High-Protein Cottage Cheese Flatbread Recipe with Roasted Tomatoes

A quick and easy high-protein flatbread made with blended cottage cheese and topped with sweet roasted tomatoes, perfect for light lunches or brunch.

  • 1 cup (225g) cottage cheese, blended until smooth (full-fat recommended)
  • 1 cup (120g) whole wheat flour, sifted (all-purpose flour can be used)
  • 1 teaspoon baking powder
  • 1 large egg, room temperature
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 pint (300g) cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano or fresh oregano
  • Salt and pepper, to taste
  • Fresh basil leaves, torn
  • Optional: red chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the halved cherry tomatoes with 2 tablespoons olive oil, oregano, salt, and pepper. Spread them cut side up on a parchment-lined baking sheet.
  3. Roast tomatoes for 20-25 minutes until soft, slightly shriveled, and caramelized at the edges.
  4. While tomatoes roast, blend the cottage cheese in a blender or food processor until smooth and creamy.
  5. In a large bowl, sift together whole wheat flour, baking powder, and salt.
  6. Add the egg and olive oil to the blended cottage cheese and mix gently but thoroughly.
  7. Pour the wet mixture into the dry ingredients and stir with a spatula until just combined. Adjust consistency with flour or water/milk if needed.
  8. Transfer dough onto a floured surface and flatten into a roughly 10-inch (25 cm) circle about ¼ inch (0.6 cm) thick.
  9. Place the dough on parchment on a baking sheet and bake for 12-15 minutes until edges are golden and flatbread springs back when touched.
  10. Remove flatbread from oven and immediately spread roasted tomatoes evenly on top.
  11. Scatter fresh basil leaves and optional chili flakes over the flatbread.
  12. Slice into wedges and serve warm.

Notes

Blending the cottage cheese until smooth is key for a moist, pliable dough. Roasting tomatoes brings out natural sweetness and depth of flavor. For a crunchier crust, broil the flatbread with tomatoes for 1-2 minutes after assembling. Dough can be prepared ahead and refrigerated for up to 24 hours before baking.
