  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup (100g) shredded sharp cheddar cheese
  • 1 cup grated zucchini (about 1 medium), squeezed dry
  • ½ cup grated carrot (about 1 medium)
  • 2 large eggs, room temperature
  • ½ cup (120g) plain Greek yogurt
  • ½ cup (120ml) milk, any type
  • ¼ cup (60ml) olive oil or melted butter
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried oregano or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your muffin tin or line it with paper liners.
  2. Grate the zucchini and carrot. Place the zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, sift together the flour, baking powder, baking soda, salt, and black pepper. Toss in the shredded cheese and dried oregano.
  4. In a separate bowl, whisk the eggs, Greek yogurt, milk, olive oil or melted butter, and honey or maple syrup until smooth.
  5. Add the grated zucchini and carrot to the wet ingredients and mix gently. Pour the wet mixture into the dry ingredients and fold together just until combined. Do not overmix.
  6. Spoon the batter evenly into the 12 muffin cups, filling each about 3/4 full. Smooth the tops with the back of a spoon if desired.
  7. Bake for 18-22 minutes, starting to check at 18 minutes with a toothpick inserted in the center; it should come out clean or with a few moist crumbs.
  8. Let the muffins rest in the tin for 5 minutes before transferring to a cooling rack to cool completely.

Notes

Squeezing the zucchini dry is crucial to avoid soggy muffins. Do not overmix the batter to keep muffins tender. Tent with foil if muffins brown too quickly. Use room temperature ingredients for best texture. Muffins can be frozen for up to 3 months.
