  • 1/2 cup chopped fresh cilantro
  • Juice of 2 limes

  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes (fresh or canned)
  • 2 green onions, sliced
  • Optional toppings: avocado slices, shredded cheese, plain Greek yogurt or dairy-free alternative

Instructions

  1. Prepare the cauliflower rice: If using fresh cauliflower, remove leaves and core, then pulse in a food processor until rice-sized pieces form (about 4 cups). If using frozen, thaw completely and pat dry to remove excess moisture. Set aside.
  2. Sauté aromatics: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add diced onion and cook for 3–4 minutes until translucent. Stir in minced garlic and cook an additional 30 seconds until fragrant.
  3. Cook ground turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Cook for 6–8 minutes until browned and no longer pink, stirring occasionally. Season with cumin, chili powder, smoked paprika, salt, and pepper. Mix well to coat the meat evenly with spices.
  4. Add beans and tomatoes: Stir in black beans and diced tomatoes. Cook for another 3–4 minutes, letting the flavors meld and excess liquid reduce slightly.
  5. Cook cauliflower rice: In a separate large pan, heat remaining 1 tablespoon olive oil over medium heat. Add the cauliflower rice and sauté for 5–7 minutes until tender but not mushy. Season lightly with salt and pepper.
  6. Mix cilantro and lime: Remove the cauliflower rice from heat and stir in chopped cilantro and fresh lime juice. Taste and adjust seasoning if needed.
  7. Assemble the taco bowls: Spoon a generous portion of cilantro lime cauliflower rice into bowls. Top with the spiced ground turkey mixture. Garnish with sliced green onions and your choice of optional toppings like avocado or Greek yogurt.

Notes

If turkey dries out, add a splash of water or broth to keep it juicy. Avoid overcooking cauliflower rice to retain texture. Add lime juice off the heat to preserve brightness. Press thawed cauliflower rice dry to prevent sogginess. Use a nonstick or well-seasoned skillet for best results.
