  • 3 medium fresh peaches, peeled and diced
  • 1 small jalapeño pepper, seeded and finely chopped (leave seeds in for more heat)
  • ¼ cup fresh cilantro, chopped (stems mostly removed)
  • ¼ cup red onion, finely diced
  • 2 tablespoons freshly squeezed lime juice
  • ½ teaspoon salt
  • 1 teaspoon honey or agave (optional)
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Peel and dice the peaches: blanch peaches by scoring an ‘X’ on the bottom, dunk in boiling water for 30 seconds, then shock in ice water to slip off skins. Dice into ½-inch pieces (about 10 minutes).
  2. Prepare the jalapeño: slice in half lengthwise, scrape out seeds if milder heat is desired, then finely chop (about 3 minutes).
  3. Dice the red onion finely (about 3 minutes).
  4. Chop the cilantro roughly, including stems (1-2 minutes).
  5. In a medium mixing bowl, combine peaches, jalapeño, red onion, and cilantro. Add lime juice, salt, honey (if using), and olive oil. Stir gently but thoroughly.
  6. Taste and adjust seasoning: add more lime juice for zing or honey for sweetness. If salsa is watery, drain excess liquid using a fine mesh strainer.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld. Stir gently before serving.

Choose firm, ripe peaches to avoid watery salsa. Adjust jalapeño seeds to control heat. Chill salsa for at least 30 minutes for best flavor. Can substitute coconut water for olive oil for a dairy-free twist. Avoid overmixing to prevent bruising peaches.
