These fresh watermelon lime popsicles are a quick, easy, and refreshing summer treat with no added sugar, perfect for hydrating and cooling off on hot days.

Ingredients

  • 4 cups cubed fresh watermelon (seedless if possible)
  • Juice of 2 medium limes (about 3 tablespoons)
  • 1/4 cup (60 ml) water
  • About 8 fresh mint leaves (optional), gently bruised
  • A pinch of sea salt

Instructions

  1. Cut about 4 cups (roughly 600 grams) of watermelon into cubes, removing seeds if necessary.
  2. Squeeze the juice from 2 medium limes (about 3 tablespoons), straining out seeds.
  3. In a blender, combine watermelon cubes, lime juice, 1/4 cup (60 ml) water, a pinch of sea salt, and bruised mint leaves if using. Blend on high for 1-2 minutes until smooth and slightly frothy.
  4. Optional: Pour the blended mixture through a fine mesh strainer to remove pulp or tiny seeds for an ultra-smooth texture.
  5. Pour the mixture into popsicle molds, leaving a small gap at the top for expansion. Insert sticks if needed.
  6. Freeze molds for at least 4-6 hours or until completely solid. Overnight freezing is best.
  7. To unmold, run warm water on the outside of the molds for 10-15 seconds and then enjoy.

Notes

Use ripe, seedless watermelon for best sweetness and texture. Adjust lime juice to balance tartness. Bruise mint leaves gently to release flavor without bitterness. Straining the mixture is optional but recommended for a silky texture. Run warm water on molds to easily unmold popsicles. Avoid over-blending to prevent icy texture. Popsicles can be stored up to 2 weeks in airtight containers or molds.
