  • 1 cup (120g) dried pineapple chunks (unsweetened or lightly sweetened)
  • 1 cup (80g) unsweetened shredded coconut
  • 1/2 cup (65g) raw cashews
  • 1/2 cup (70g) roasted almonds
  • 1/2 cup (60g) dried mango slices (optional)
  • 1/4 cup (35g) sunflower seeds
  • 2 tablespoons (20g) flaxseeds or chia seeds
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Gather your ingredients and measure them out as listed.
  2. Optional toasting: Preheat oven to 325°F (160°C). Spread cashews, almonds, and shredded coconut evenly on a baking sheet. Toast for 8-10 minutes, stirring halfway through, until golden and fragrant. Remove and let cool.
  3. In a large mixing bowl, combine dried pineapple chunks, dried mango slices, sunflower seeds, flaxseeds or chia seeds, and the cooled toasted nuts and coconut (if toasted).
  4. Sprinkle sea salt and ground cinnamon evenly over the mixture. Toss gently but thoroughly to distribute flavors.
  5. Taste a small handful and adjust salt or cinnamon if desired, mixing again.
  6. Transfer the trail mix to an airtight container or jar. Store at room temperature for up to two weeks or refrigerate for up to one month.

Toasting nuts and coconut enhances flavor and crunch but watch carefully to avoid burning. Use unsweetened or lightly sweetened dried fruits to avoid overpowering sweetness. Store in airtight container away from moisture. For nut-free version, substitute nuts with extra seeds like pumpkin or hemp seeds.
