Fresh Lavender Honey Lemonade

A refreshing summer drink combining the tang of fresh lemon, the sweetness of honey, and the calming floral notes of lavender. Perfect for outdoor gatherings and easy to make in just 5 simple steps.

Ingredients

  • 6 medium fresh lemons (about 1 cup or 240 ml fresh lemon juice)
  • 1/2 cup (120 ml) raw or wildflower honey
  • 2 tablespoons dried culinary lavender (food-grade)
  • 4 cups (960 ml) cold water
  • 1 cup (240 ml) hot water for steeping lavender
  • Ice cubes for serving
  • Optional garnishes: fresh lemon slices, lavender sprigs, or mint leaves

Instructions

  1. Heat 1 cup (240 ml) of water until it simmers, then remove from heat. Add 2 tablespoons of dried culinary lavender and steep for 10 minutes. Strain through a fine mesh strainer into a pitcher, discarding lavender buds.
  2. Juice about 6 medium lemons to yield 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp if desired.
  3. Add 1/2 cup (120 ml) honey to the warm lavender water in the pitcher and stir until dissolved. Then add the fresh lemon juice and stir again.
  4. Pour in 4 cups (960 ml) cold water and mix well. Taste and add more cold water if needed. Refrigerate for at least 30 minutes to chill and let flavors meld.
  5. Serve over ice cubes, garnished with lemon slices or lavender sprigs if desired. Enjoy immediately.

Notes

Do not over-steep lavender to avoid bitterness; 10 minutes is ideal. Use fresh lemon juice for best flavor. Dissolve honey in warm water for smooth mixing. Chill lemonade for at least 30 minutes before serving. For a fizzy version, replace half the cold water with sparkling water before serving.
