  • 2 large Honeycrisp apples, cored and sliced thin
  • 8 oz Brie cheese wheel
  • 6 oz aged cheddar, sliced or cubed
  • 4 oz Manchego cheese, sliced
  • 4 oz prosciutto, thinly sliced
  • 4 oz sopressata salami, sliced
  • 2 tbsp honey
  • 1/2 cup roasted almonds
  • 1/2 cup dried figs
  • 20 assorted crackers
  • Fresh rosemary sprigs for garnish
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1 cup cold water

Instructions

  1. Prepare the apple slices: In a small bowl, mix 1 cup cold water, 1 tbsp lemon juice, and 1/4 tsp salt. Core the Honeycrisp apples and slice them thinly (about 1/4 inch thick). Place the slices in the lemon water and let them soak for 2-3 minutes. Drain and pat dry with paper towels.
  2. Arrange the cheeses: Place the brie wheel in the center-left of your board. Slice the aged cheddar into thin triangles or cubes and arrange them in a small cluster near the brie. Fan out the Manchego slices in a separate cluster.
  3. Add the meats: Drape the prosciutto slices in loose folds near the brie. Arrange the sopressata slices in a small pile or fan them out.
  4. Place the apple slices: Fan out the prepared apple slices in a crescent shape along one edge of the board. Overlap them slightly for visual appeal.
  5. Fill in with accompaniments: Scatter the roasted almonds and dried figs in small clusters around the board. Place the crackers in a neat stack or fan near the cheeses. Drizzle honey over the brie and a few apple slices.
  6. Garnish and finish: Tuck fresh rosemary sprigs between the cheese and apple clusters. Fill any empty spots with extra nuts or crackers.
  7. Serve immediately: This board is best enjoyed within 2 hours of assembling.

Notes

Soak apple slices in lemon water to prevent browning. Bring cheeses to room temperature before serving for best flavor. Avoid overcrowding the board; leave space between clusters.
