  • 1 can black beans, rinsed and drained
  • 1 can black-eyed peas, rinsed and drained
  • 1 cup corn kernels, fresh or frozen and thawed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 3 green onions, thinly sliced
  • 1 jalapeño, seeded and finely chopped (optional)
  • ½ cup fresh cilantro, chopped (packed)
  • 1 avocado, diced (optional but recommended)
  • 3 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • Black pepper, to taste

Instructions

  1. Rinse and drain the black beans and black-eyed peas under cold water until water runs clear. Drain well. (5 minutes)
  2. Prepare the veggies: halve cherry tomatoes, dice red bell pepper, thinly slice green onions, finely chop jalapeño if using, chop cilantro, and dice avocado last to prevent browning. (10 minutes)
  3. Make the dressing by whisking together fresh lime juice, olive oil, honey or agave syrup, ground cumin, salt, and black pepper in a small bowl. Adjust seasoning to taste. (5 minutes)
  4. In a large mixing bowl, gently toss the beans, peas, corn, tomatoes, bell pepper, green onions, jalapeño, and cilantro. Pour the dressing over and toss lightly to coat evenly. (5 minutes)
  5. Fold in the diced avocado carefully to keep its creamy texture intact. (2 minutes)
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let flavors meld. (30 minutes or longer)
  7. Before serving, gently stir the cowboy caviar, taste for salt, and adjust if needed. Serve chilled with tortilla chips or as a topping for grilled meats or tacos. (2 minutes)

Notes

Add avocado just before serving to prevent browning. Use fresh lime juice for best flavor. Rinse canned beans well to remove excess sodium and starch. Adjust spice level by including or removing jalapeño seeds. Chill for at least 30 minutes to meld flavors. For vegan version, substitute honey with agave or maple syrup.
