Instructions

  1. Crack 2-3 large eggs into a mixing bowl. Add 1 tablespoon (15 ml) of whole milk and a pinch of salt. Whisk vigorously with a fork or whisk until the mixture is uniformly yellow and slightly frothy, about 30 seconds.
  2. Heat an 8-inch nonstick skillet over low heat. Add 1 tablespoon (14 g) of unsalted butter and let it melt gently without browning, about 1-2 minutes.
  3. Pour the egg mixture into the pan. Let it sit undisturbed for about 10 seconds until the edges begin to set.
  4. Using a silicone spatula, gently stir the eggs, moving slowly from the edges toward the center, folding the eggs over themselves. Keep the heat low.
  5. Continue stirring and folding for about 1 to 1.5 minutes until soft curds form and eggs look slightly wet but not runny. Remove from heat just before fully done to allow residual heat to finish cooking.
