  • 3 cloves garlic, minced
  • 1 tablespoon fresh lime juice
  • ½ cup Cotija cheese, crumbled
  • 1 teaspoon chili powder (optional)
  • Salt to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F). If using a grill pan, heat it over medium-high on your stove (about 10 minutes).
  2. In a small saucepan, melt the unsalted butter over medium heat. Stir frequently as it foams and turns golden brown with a nutty aroma (3-5 minutes). Remove from heat quickly to avoid burning.
  3. Stir in the minced garlic and honey immediately into the browned butter. Let it cool slightly (1-2 minutes).
  4. Brush each ear of corn generously with the honey garlic brown butter mixture, covering all sides evenly.
  5. Place the corn directly on the grill grates. Cook for 10-12 minutes, turning every 2-3 minutes to achieve even char and caramelization.
  6. Remove corn from the grill and immediately squeeze fresh lime juice over each ear. Sprinkle generously with crumbled Cotija cheese and chili powder if using.
  7. Garnish with chopped fresh cilantro and serve hot.
