Juicy, smoky grilled watermelon steaks paired with a tangy balsamic glaze create a refreshing and satisfying summer dish that’s quick and easy to prepare.

  • 4 cups watermelon, sliced into thick 1-inch steaks
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or maple syrup (optional)
  • Fresh herbs (mint or basil) for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat, about 400°F (200°C).
  2. Slice the watermelon into 1-inch thick steaks, leaving rind on if desired for easier handling.
  3. Brush both sides of each watermelon steak lightly with olive oil.
  4. Sprinkle sea salt and freshly cracked black pepper on both sides.
  5. Place the watermelon steaks on the grill and cook for 3-4 minutes per side until grill marks appear and sugars caramelize.
  6. While grilling, pour balsamic vinegar into a small saucepan and bring to a gentle boil over medium heat.
  7. Add honey or maple syrup if using, then reduce heat and simmer for 8-10 minutes, stirring occasionally, until thickened to a syrupy consistency.
  8. Remove watermelon from grill and transfer to a serving plate.
  9. Drizzle generously with the balsamic glaze and garnish with fresh herbs if desired.
  10. Serve immediately while warm.

Notes

Keep watermelon slices about 1 inch thick to prevent them from falling apart. Oil the grill grates or the watermelon steaks to prevent sticking. Simmer balsamic glaze gently to avoid burning. Use a spray bottle of water to control grill flare-ups. For a vegan glaze, substitute honey with maple syrup. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated briefly on a grill pan.
