Instructions

  1. Peel and chop 3 medium ripe peaches into small chunks. (Tip: Score an “X” on the bottom of each peach and blanch in boiling water for 30 seconds to loosen the skin.) This should take about 10 minutes.
  2. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.
  3. Stir in the chopped peaches and 1/4 cup bourbon. Let this simmer gently for 5 minutes, stirring occasionally to soften the fruit and let alcohol cook off.
  4. Add 1 cup ketchup, 2 tablespoons apple cider vinegar, 1/4 cup packed brown sugar, 1 tablespoon Worcestershire sauce, and 1 tablespoon yellow mustard. Stir to combine everything well.
  5. Add 1 teaspoon smoked paprika, 1/2 teaspoon chipotle powder (if using), 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Stir thoroughly.
  6. Lower heat to medium-low and let the sauce simmer gently for 15-20 minutes. Stir occasionally to prevent sticking.
  7. Use an immersion blender directly in the pot to puree the sauce to your desired consistency (optional).
  8. Taste and adjust salt, pepper, or sweetness as needed.
  9. Allow the sauce to cool before transferring to a clean jar or bottle. Store in the refrigerator for up to 2 weeks.

Notes

If peaches aren’t in season, frozen peaches work well. You can substitute apple cider vinegar with white vinegar. For gluten-free, ensure Worcestershire sauce is certified gluten-free. Use an immersion blender for a smooth sauce or skip for chunkier texture. Adjust chipotle powder to control heat. Store sauce in refrigerator up to 2 weeks or freeze up to 3 months. Warm gently when reheating.
