A quick and easy air fryer ribeye steak recipe featuring juicy, tender steak with a rich roasted garlic butter, perfect for a restaurant-quality meal at home without grilling.

  • 1 ribeye steak (1-inch thick, about 1012 oz / 280340 g)
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 4 tablespoons (57 g) unsalted butter
  • 4 large garlic cloves, peeled
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) lemon juice (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut the top off a head of garlic to expose cloves, drizzle with olive oil, wrap tightly in foil, and roast for 30-35 minutes until soft and golden.
  2. Once cooled, squeeze roasted garlic cloves into a bowl and mash with butter, chopped parsley, and optional lemon juice. Refrigerate to firm up while prepping steak.
  3. Pat ribeye steak dry with paper towels. Brush both sides lightly with olive oil, then season generously with salt and freshly ground black pepper. Let sit at room temperature for 10-15 minutes.
  4. Preheat air fryer to 400°F (200°C) for 3-5 minutes.
  5. Place ribeye in air fryer basket without overcrowding. Cook at 400°F for 9-12 minutes, flipping halfway through (around 5-6 minutes). Use an instant-read thermometer to check doneness: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  6. Remove steak from air fryer and rest on a plate for 5-7 minutes to allow juices to redistribute.
  7. Slice steak against the grain and top each portion with a generous dollop of roasted garlic butter. Serve immediately.

Notes

Pat steak dry before cooking to develop a better crust. Do not overcrowd the air fryer basket. Flip steak halfway through cooking for even searing. Rest steak for 5-7 minutes before slicing to retain juices. Optional: finish with a quick sear in a hot cast iron pan for extra char. Roasted garlic butter can be made ahead and refrigerated. Adjust cooking times for steak thickness and air fryer model.
