  • 1 cup fresh ricotta cheese (whole milk preferred), at room temperature
  • 6 to 8 ripe fresh figs, washed and quartered
  • 4 ounces thinly sliced prosciutto, torn into bite-sized pieces
  • 2 tablespoons good quality runny honey
  • Small sprigs of fresh thyme or rosemary (optional)
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Pinch of sea salt flakes

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet in a single layer. Brush each slice lightly with extra virgin olive oil.
  2. Toast the bread for 8–10 minutes, flipping halfway through, until golden and crisp but not burnt.
  3. While the bread is toasting, gently stir the ricotta cheese with a pinch of sea salt and freshly ground black pepper. If using fresh herbs, finely chop and mix in.
  4. Wash and quarter the fresh figs into bite-sized pieces.
  5. Once the bread is toasted, let it cool slightly. Spread about 1 tablespoon of the ricotta mixture evenly on each crostini.
  6. Top each crostini with a piece of prosciutto and a few fig quarters.
  7. Drizzle each crostini lightly with honey.
  8. Finish with a pinch of sea salt flakes and a light grind of black pepper. Optionally, garnish with a small sprig of fresh thyme or rosemary.
  9. Serve immediately to enjoy the bread crisp and flavors vibrant.

Notes

Toast bread slices just before serving to keep them crisp. If ricotta is watery, drain it in a fine mesh strainer for 10 minutes before use. Use thin prosciutto slices for best texture. Drizzle honey just before serving to avoid sogginess. Variations include using toasted nuts for vegetarian option, swapping figs for seasonal fruits, or using gluten-free bread.
