Easy Turkey and Cheese Roll-Ups with Crisp Apple Slices

A quick and healthy snack combining savory turkey and cheese roll-ups with refreshing crisp apple slices, perfect for busy days or lunchboxes.

Ingredients

  • 8 slices sliced turkey breast (about 6 ounces / 170 grams), preferably low-sodium deli turkey
  • 4 slices cheese (Swiss, cheddar, or provolone; about 2 ounces / 56 grams total)
  • 1 medium crisp apple (67 ounces / 170200 grams), such as Honeycrisp or Granny Smith
  • Optional: 1/4 cup fresh spinach leaves or baby arugula (about 10 grams)
  • Optional: 1 tablespoon Dijon mustard or honey mustard (about 15 ml)

Instructions

  1. Wash and dry the apple thoroughly. Using a sharp knife, cut the apple into thin, even slices about 1/4 inch (0.6 cm) thick. Remove the core as you slice. Set aside on a plate.
  2. Place the turkey breast slices flat on a clean cutting board or plate. Gently press to flatten slightly for easier rolling if needed.
  3. Place half a slice of cheese (or a folded slice) onto each turkey slice. If using, add a few spinach or arugula leaves on top of the cheese.
  4. If desired, lightly spread about 1/2 teaspoon (2.5 ml) of Dijon or honey mustard onto the cheese before rolling.
  5. Starting at one end, carefully roll each turkey slice around the cheese and greens until tight. They should hold together without unrolling.
  6. Place the roll-ups on a serving plate with the crisp apple slices arranged alongside.

Notes

Chill roll-ups briefly in the fridge for 10 minutes if they tend to slip apart. Toss apple slices with lemon juice to prevent browning if preparing ahead. Use a serrated knife if a sharp knife is not available for easier apple slicing.
