  • 1 cup red grapes, halved
  • 1/2 cup celery, finely diced
  • 1/4 cup green onions, sliced
  • 2 tablespoons fresh dill, chopped
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced almonds, toasted (optional)
  • 8 to 10 croissants
  • Butter lettuce or arugula, for layering
  • Thin apple slices (optional)

Instructions

  1. If using a rotisserie chicken, remove the skin and shred the meat using two forks or your hands to get about 3 cups. If cooking your own, poach 1.5 pounds of boneless, skinless chicken breasts in salted water for 15-20 minutes until cooked through, then let cool and shred.
  2. If using almonds, spread them on a baking sheet and toast at 350°F for 5-7 minutes, shaking halfway through. Let cool completely.
  3. Wash and dry the red grapes, then cut them in half. Dice the celery into small, even pieces (about 1/4 inch cubes). Slice the green onions thinly, using both white and green parts. Chop the fresh dill finely.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, and fresh lemon juice until smooth. Season with salt and pepper.
  5. In a large mixing bowl, combine the shredded chicken, halved grapes, diced celery, sliced green onions, and chopped dill. Pour the dressing over the top and gently fold everything together until well combined. If using toasted almonds, fold them in now. Cover and refrigerate for at least 30 minutes.
  6. About 10 minutes before serving, preheat the oven to 350°F. Slice each croissant in half horizontally. Place them cut-side up on a baking sheet lined with parchment paper. Brush the cut sides lightly with melted butter if desired. Toast for 5-7 minutes until the edges are golden and the croissants are warm and slightly crispy.
  7. Remove the chicken salad from the refrigerator and give it a gentle stir. Place a piece of butter lettuce or a handful of arugula on the bottom half of each toasted croissant. Spoon a generous amount of chicken salad on top (about 1/3 to 1/2 cup per sandwich). If using apple slices, add a few thin slices on top. Place the top half of the croissant on and press down gently.
  8. Serve immediately or pack for later. Best served within an hour of assembly.

Notes

The chicken salad can be made up to 3 days in advance and stored in the refrigerator. Toast croissants just before serving to keep them crispy. For a lighter option, serve the chicken salad in lettuce wraps or on gluten-free bread. The chicken salad tastes even better on the second day as flavors meld.
