  • 2 medium acorn squash (about 1½ pounds each)
  • 2 tablespoons olive oil, divided
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 pound sweet Italian sausage, casings removed
  • 1 small yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa or brown rice
  • ½ cup dried cranberries
  • ¼ cup chopped fresh sage
  • ¼ cup chopped fresh parsley
  • ⅓ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup panko breadcrumbs
  • 2 tablespoons melted butter or olive oil
  • 2 tablespoons chopped pecans

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Using a sharp knife, carefully cut each acorn squash in half from stem to tip. Scoop out the seeds and stringy bits with a spoon. Rub the cut sides and cavities with 1 tablespoon of the olive oil, then sprinkle with ¼ teaspoon salt and ⅛ teaspoon pepper. Place the squash halves cut-side down on the prepared baking sheet.
  3. Roast the squash for 25-30 minutes, until the flesh is tender when pierced with a fork. The edges should be golden and caramelized.
  4. While the squash roasts, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sausage, breaking it up with a wooden spoon. Cook for 6-8 minutes, until browned and cooked through. Use a slotted spoon to transfer the sausage to a large mixing bowl, leaving about 1 tablespoon of drippings in the pan.
  5. Reduce the heat to medium. Add the diced onion to the same skillet and cook for 4-5 minutes, until softened and translucent. Add the minced garlic and cook for 30 seconds more, until fragrant. Scrape the onions and garlic into the bowl with the sausage.
  6. Add the cooked quinoa (or rice), dried cranberries, fresh sage, fresh parsley, Parmesan cheese, red pepper flakes (if using), and the remaining ¼ teaspoon salt and ⅛ teaspoon pepper to the bowl. Stir everything together until well combined. Taste and adjust seasoning if needed.
  7. When the squash halves are done roasting, carefully flip them over using tongs. Divide the filling evenly among the four halves, mounding it slightly in the center.
  8. In a small bowl, mix the panko breadcrumbs with the melted butter and chopped pecans. Sprinkle this mixture over the stuffed squash halves.
  9. Return the stuffed squash to the oven and bake for 15-20 minutes more, until the filling is heated through and the topping is golden brown and crispy. If desired, switch the oven to broil for the last 2 minutes for extra color.
  10. Let the squash rest for 5 minutes before serving. Garnish with a few extra fresh sage leaves or a sprinkle of parsley if desired.

Notes

For a gluten-free version, use gluten-free breadcrumbs or skip them entirely. Dairy-free? Omit the Parmesan and use nutritional yeast (about 2 tablespoons). Swap the sausage with ground turkey or plant-based crumbles for a lighter option. If cranberries aren’t your thing, dried cherries or chopped dried apricots work beautifully. Don’t skip the cut-side-down roasting step—it steams the squash while it roasts, keeping it tender and preventing it from drying out.
